Offer low-fat salad dressing and other dips as a side for vegetables. Mix in vegetables with foods that your child already likes, such as a topping on pizza, extra in spaghetti sauce, or mix in a casserole or soup. Let your kids grow their own vegetables or visit a farmer's market to buy fresh vegetables. Provide raw vegetables, such as baby carrots, as a snack. Offer a lot of choices, provide small servings at first, and keep in mind that some picky eaters won't try a new vegetable until they see it on their plate 10 or more times.

Mix it into their food so they don't even know it's there.
Give them special dipping sauces to dip them in.
Give them different colors of foods so they can make faces on their plates before eating them.

Serve veggies that they can dip. Serve celery and give them peanut butter to dip it in or serve carrots and give them some ranch dressing to dip it in.

Definitely try this website. It's a way to hide veggies so they're virtually invisible. http://www.thesneakychef.com/
Of course, you'll eventually need to teach them to knowingly eat veggies, but this will work in a fix.

2) Blend a few into icecream (not that many or else it will taste nasty) add some milk and it will be a milkshake but with veges (they just wont know it)
3) take the desert part from their lunch and say you cant have this until you eat everything else.

Jessica Seinfeld's book about "hiding" veggies was at Costco last time I looked. I don't know if that will help, but maybe there will be some ideas for you.
As far as getting kids to eat veggies outright, have you tried asking them what's wrong with them? Lots of kids don't like food that's soggy and boiled, but they'll chew on fresh celery or broccoli all day long. Or, with a touch of melted velveeta, anything looks good to a 4 year old.

Fruit & Vegetable Blended Drinks.
Get the school to buy a blender. I have a Sunbeam Multi Blender with Ice-Crusher, it cost less than $100.
And ask the parents to supply the produce.
I am currently drinking:
A punnet of blueberries
One orange
One banana
250g spinach
250ml water
Blended
OR
One banana
250g spinach
250ml water
Blended
To add more texture, especially in summer, you can use frozen fruit (hence the need for a blender with an ice-crusher)
OR
One banana
250g spinach
250ml milk (dairy, soy, rice or almond)
Touch vanilla (optional)
Blended
The drinks obviously have a green tinge to them because of the spinach but most kids seem to think this is a “fun” drink because of the colour. Also because of the inclusion of the fruit, you cannot actually taste the spinach.
You could pretend you are making “special milkshakes” and don’t tell them there is spinach in the drinks, and then they won’t know any different.
If you have easy access to certified organic produce then purchase this. The taste is really yummy and it has better nutrient value - 40% more - than non-organic produce.
Also get a water filter jug (less than $30.00) because using filtered water tastes better.
You could also get the children to make vegetables into pictures – planes, stick people, houses etc…which may make the veggies more fun to eat at the end.
Make a mash avocado dip and using slices of raw celery, carrot, etc… as the dippers.
Make ice -“cream” from frozen fruit. Looks like a scoop of traditional ice-cream but is made from just fruit.
Set good examples; let the children see you and your work colleagues also eating healthy foods.

I recently took a veggie tray with ranch dressing dip to a kid's birthday party. The kids devoured it and I came home with only a couple of olives and a broccoli sprig. I think most kids like raw veggies better than cooked any old day!

Its fun to cut them into fun shapes or make their plate look fun with them. make it a game or reward them when they do good. You can cut a carrot like sun, add broccoli as trees and so on. Make it fun!
